Thingol orders the dwarves of Belegost to craft a piece of jewelry into which the Silmaril could be set into. The dwarves made a beautiful necklace for the jewel, but they didn't want to give it up. This led to an all-out battle between the dwarves and elves.
Greed and jealousy eventually lead to the death of a number of dwarves and the assassination of Thingol. Elves and dwarves were set against each other from their creation. With dynamics like these, both species were bound to feel negative feelings toward one another.
Thingol likely recruited dwarves to work for him in his mission to acquire the Silmaril because his very creation gave him a superiority complex toward the other species.
As Thingol's lust for the Silmaril takes place during the First Age, a lot of time had clearly passed. But the betrayal that both species felt against the other ran deep. Legolas and Gimli show extreme prejudice against one another. On the surface, their tolerance and eventual friendship offer the Peter Jackson movies most of their comedic relief.
Thingol and his Dwarf allies also fought together against their mutual enemy, the Orcs, who were under the sway of Sauron 's predecessor, Melkor. As is typical of Middle-earth history, however, problems began to arise over a particularly valuable piece of jewelry. As price for his daughter's hand in marriage, Thingol demands a Silmaril, a coveted Elvish jewel renowned throughout Middle-earth, and that lends its title to Tolkien's posthumously-released The Silmarillion. Having created such a stunning piece with such a rare wonder at the center, the Dwarven smiths claim their creation as their own and refused to hand it over, causing Thingol to sour and insult the Dwarves, deeming them an inferior race.
These words and the smiths' greed spark a battle within Thingol's capital and only two dwarves survive the clash. After escaping, however, this duo incite others of their kind to war by recounting an exaggerated version of events, and this ultimately results in Thingol being assassinated by an ambush of dwarves and his realm being looted.
The Elves and Dwaves have been on icy terms ever since, though it's likely that many have forgotten exactly why by the Third Age. While the death of Thingol and the claiming of the Silmaril is the key cause of bad blood between these two races in Middle-earth, it could be argued that Elves and Dwarves were always destined to be at odds with each other.

The two dwarven escapees then incited their people to war over this - the result was the Sack of Doriath, and the destruction of one of the great Elven realms: the Dwarves held on their way, and passed over the great bridge, and entered into Menegroth; and there befell a thing most grievous among the sorrowful deeds of the Elder Days.

In a nutshell, the entire Silmarillion is "X and Y both wanted shiny object Z, so they killed each other, thus leading to thousands of years of misery. That's what I love about the Silmarillion, when Tolkien goes into full mythology mode. This is exactly the sort of mythical stories that would arise when a people, at war with each other for millenia, construct celestial, intrinsic reasons for events.
Wasn't Illuvatar referring to Men when he refers to "My Children"? So "children of my choice" should be Men right? They are both of his choice. He chose to create them as his children. He didn't choose to create the dwarves, but he agrees to adopt them. Who does choice refer to: Elf, Man or both? From the words alone, I don't think we can tell, but the events that follow tell us the answer sure enough.
